“L’Aglio Nero”: Reinterpretazione di una specie botanica alimentare come nuova risorsa gastronomica e funzionale

The term "black garlic" means a processed product obtained by prolonged heat treatment of fresh garlic. This product, developed in the early 20th century in the East, nowadays finds interest in Europe for its gastronomic characteristics and for its functional properties. Humidity, time and temperature of the transformation process are the parameters that determine the characteristics and quality of the final product. The biochemical transformations that garlic undergoes during the heat treatment involve an enhancement of its functional and specific characteristics of the olfactory and gustatory characteristics, which make a wider consumption of the product.
Fosan proposes protocols for the production of black garlic adapted to the transformation of the different national cultivars and new gastronomic and health products having black garlic as the main ingredient.
